Classic Egg Salad

Sweet pickle relish
Chopped dill pickles
Fresh dill
A pinch of garlic powder
A dash of hot sauce
Chopped parsley
Finely diced red bell pepper
A small splash of pickle juice
Just remember: classic egg salad is all about balance. It’s easy to keep adding ingredients until the eggs get lost, so start small.

How to Make Classic Egg Salad
Step 1: Hard-Boil the Eggs
Place the eggs in a saucepan and cover them with cold water by about an inch.

Bring the water to a boil over medium-high heat.

Once the water reaches a full boil, turn off the heat and cover the pan with a lid.

Let the eggs sit for about 10–12 minutes.

Transfer them immediately to a bowl of ice water and let them cool for at least 5 minutes.

Step 2: Peel the Eggs
Once the eggs are cool enough to handle, gently tap them all over and peel away the shells.

Rinse away any tiny pieces of shell.

Pat the eggs dry.

Step 3: Chop the Eggs
Cut each egg in half and chop it into small pieces.

You can chop them very finely for a smooth sandwich filling or leave some larger pieces if you prefer a chunkier egg salad.

I like somewhere in the middle.

You want plenty of creamy egg yolk mixed throughout while still being able to see little pieces of egg white.

Step 4: Make the Dressing
In a medium mixing bowl, stir together the mayonnaise, mustard, salt, black pepper, and paprika.

Mix until smooth.

Step 5: Add Everything Together
Add the chopped eggs, celery, and green onion to the bowl.

Gently fold everything together.

Don’t stir too aggressively. A little texture is what makes homemade egg salad so good!

Step 6: Taste and Adjust
Give the egg salad a taste.

Does it need more mustard?

A little salt?

More pepper?

Maybe a touch more mayonnaise?

This is your chance to make it exactly the way you like it.

Step 7: Chill
Cover the bowl and refrigerate the egg salad for at least 30 minutes before serving if you have the time.

That short rest gives the flavors a chance to come together.

How to Serve Classic Egg Salad
Of course, the most traditional way is to make a sandwich.

Spread the egg salad generously between two slices of soft sandwich bread, then add lettuce if you like a little freshness and crunch.

But don’t stop there!

Try It On
Toasted sourdough
Croissants
English muffins
Crackers
Tortilla wraps
Lettuce leaves
Cucumber slices
Toast points
You can even spoon it onto a bed of greens for an easy lunch salad.

And if you’re serving it for a gathering, small egg salad tea sandwiches are always a hit.

Tips for the Best Egg Salad
Don’t Overcook the Eggs
Overcooked eggs can develop a gray-green ring around the yolk and a slightly rubbery texture.

They’re still usable, but perfectly cooked eggs make noticeably better egg salad.

Cool the Eggs Quickly
An ice bath helps stop the cooking process and makes the eggs easier to peel.

Chop According to Your Preference
For a spreadable sandwich filling, chop the eggs quite finely.

For a chunky salad, leave larger pieces of egg white and yolk.

Don’t Add Too Much Mayonnaise at Once
You can always add more.

Start with the recommended amount and increase it gradually until the texture is where you want it.

Let It Chill
Freshly mixed egg salad is delicious, but giving it a little time in the refrigerator allows the mustard, mayonnaise, and seasonings to mingle with the eggs.

The flavor gets even better.

Make-Ahead Instructions
Classic egg salad is an excellent make-ahead lunch.

You can prepare it a day in advance, cover it tightly, and refrigerate it until you’re ready to serve.

In fact, making it ahead can make busy mornings much easier.

Just give it a quick stir before serving.

How to Store Egg Salad
Keep egg salad refrigerated in a tightly covered container.

For best quality, use it within 3–4 days.

Don’t leave egg salad sitting at room temperature for extended periods, particularly outdoors or at picnics. If you’re serving it at a gathering, keep it chilled and return leftovers to the refrigerator promptly.
